Winter Warming Veggie Soup

Cooking Time: 60 minutes
Yields: 4 servings





Butternut Squash (peeled & chopped, take out the seeds)

Celery (4 stalks)


Garlic (4 cloves)

Kale (3 stalks)

Pumpkin Seeds


Coconut Oil


Chop up butternut squash, celery, parsnip, garlic and kale and fill a pot with them.

You can chop all of the veggies into big chunks – they don’t need to be that small!

Fill the pot with enough water to cover the veggies. Let boil for 10 minutes and then simmer until veggies look soft enough to blend. I like to let my soup sit for over an hour because it makes the house smell amazing!

Add any herbs you like, oregano, rosemary, salt & pepper, etc.

Add coconut oil at the very end (a tablespoon or two).

Add pumpkin seeds & avocado to taste 🙂



You may have enough to freeze for future use. Also, this recipe can be changed around completely, I typically just put whatever veggies I have in my fridge, carrots, turnips, even cucumbers, it always tastes amazing! I also do potatoe & leek! As long as you have a strong enough, good tasting base (butternut, potatoe, leek, etc) you can get in loads of veggies!
