Warm Quinoa & Kale Salad

Prep Time: 10 minutes
Cooking Time: 20 minutes
Yields: 5 servings





Kale (one huge bunch)

Quinoa (two cups)

Raw Pumpkin seeds

Lemon juice (one large lemon)

White Beans (1 cup)

Olive Oil 

Salt (Celtic Sea Salt) & Pepper



Take kale off of the stems. Chop up into small pieces and sauté with olive oil until cooked through.

Cook 2 cups quinoa after rinsing or soaking (follow directions on package)

Cook white beans.

Mix quinoa, kale, beans, pumpkin seeds, lemon juice and olive oil. I pour olive oil on for about 10 seconds. Quinoa soaks up oil and it’s a wonderful way to get lots of healthy fats into your day!
