Toasted Garlic & Cauliflower Soup

Prep Time: 15 minutes
Cook Time: 20 minutes
Yields: 5-7 servings
Ingredients:
2 small heads of cauliflower, chopped
4 cloves of garlic, sliced
olive oil
5 cups chicken broth (free-range & organic)
1 tablespoon thyme leaves
sea salt & pepper
Directions:
Toast garlic in oil in large pot over medium heat until golden (about 2 minutes). Remove & save.
Add cauliflower, chicken broth, thyme, 1 teaspoon salt & 1/4 teaspoon pepper. Simmer until tender (15-20 minutes).
Blend with hand-held blender.
Add olive oil and toasted garlic & enjoy!
