Gluten-Free Blueberry Walnut Muffins

Cook Time: 16-18 minutes
Yields: 12 muffins
Ingredients:
- 5 eggs
- 1 cup applesauce
- 3/4 cup coconut flour (or any gluten-free flour)
- 1 tsp baking soda
- 1/4 cup pasture raised butter (or coconut oil)
- 2 tablespoons honey
- 1/4 tsp salt
- 2/3 cup walnuts
- 1 1/2 cups blueberries
*All organic!
Directions:
♥ Preheat oven to 400 degrees.
♥ Melt butter or oil on the stove and let cool.
♥ Put all ingredients (except walnuts & blueberries) into bowl and whisk until well mixed.
♥ Let sit for a few minutes.
♥ Fold in walnuts and blueberries.
♥ Spoon into muffin tins.
♥ Bake for 16-18 minutes, let cool & dig in!
