Cooling Quinoa Mango Salad

Prep Time: 30 minutes
Cooking Time: 15 minutes
Yields: 5-10 servings
Ingredients:
2 cups of quinoa
2 mangos peeled and chopped
1 red pepper chopped
1 cup chopped cilantro
1 cup chopped scallions
2 tablespoons grape seed oil
1 tablespoon mirin
1 tablespoon red wine vinegar
15 ounces black beans (or about one can worth)
celtic sea salt to taste
Directions:
Fold all together and let sit in the refrigerator for a few hours so the flavors meld together
