Warm Quinoa & Kale Salad

Warm Quinoa & Kale Salad

 

Prep Time: 10 minutes
Cooking Time: 20 minutes
Yields: 5 servings

 

 

 

Ingredients:

Kale (one huge bunch)

Quinoa (two cups)

Pumpkin seeds

Lemon juice (one large lemon)

White Beans (1 cup)

Olive Oil (or Flax Seed or Hemp Seed Oil)

Coconut Oil

Salt (Celtic Sea Salt) & Pepper

Directions:

Take kale off of the stems. Chop up into small pieces and sauté with coconut oil and water until cooked through.

Cook 2 cups quinoa after rinsing or soaking (follow directions on package)

Cook white beans.

Mix quinoa, kale, beans, pumpkin seeds, lemon juice and olive oil. I pour olive oil on for about 10 seconds. Quinoa soaks up oil and it’s a wonderful way to get lots of oil into your meal!
