Sautéed Brussel Sprouts with Pumpkin Seeds

Cooking Time: 20 minutes
Yields: 2 servings
Ingredients:
Brussels Sprouts (25-30 or however many will fit in your pan)
Garlic (5 cloves)
Onion (1 large red onion)
Coconut Oil
Pumpkin Seeds
Cultured Veggies
Directions:
Chop up garlic & onion and start to sauté with water and a little bit of coconut oil on medium-low heat while cutting brussels sprouts in half.
Add brussels sprouts to the pan and sauté until soft. Add a heaping tablespoon of coconut oil while cooking and more water if necessary.
At the end I like to raise the heat to high for a minute or so to make them a bit crispy.
These are amazing on their own but for more texture & flavor top with pumpkin seeds, sea salt & pepper and my favorite, cultured veggies.
Notes:
I say for 2 people because we eat these in one sitting, for normal people who don’t inhale brussels sprouts, it may stretch to 4 people!
