Gluten-Free Blueberry Walnut Muffins

Cook Time: 16-18 minutes
Yields: 12 muffins

Ingredients:
  • 5 eggs
  • 1 cup applesauce
  • 3/4 cup coconut flour (or any gluten-free flour)
  • 1 tsp baking soda
  • 1/4 cup pasture raised butter (or coconut oil)
  • 2 tablespoons honey
  • 1/4 tsp salt
  • 2/3 cup walnuts
  • 1 1/2 cups blueberries

*All organic!

 

Directions:

 Preheat oven to 400 degrees.

 Melt butter or oil on the stove and let cool.

Put all ingredients (except walnuts & blueberries) into bowl and whisk until well mixed.

 Let sit for a few minutes.

♥ Fold in walnuts and blueberries.

 Spoon into muffin tins.

 Bake for 16-18 minutes, let cool & dig in!
