Butternut Squash & Leek Soup

Butternut Squash & Leek Soup

Prep Time: 15 minutes
Cook Time: 30 minutes
Yields: 5-7 servings

 

 

 

Ingredients:

1 whole head of garlic, peeled

olive oil

6 cups leeks sliced (4 large leeks)

4 cups butternut squash (1 medium squash)

2 cups water

2 cups chicken broth (free-range & organic)

1/2 tsp sea salt

1/2 tsp black pepper

 

Directions:

Put everything ( except the squash & the olive oil) in a medium size pot and bring to a boil.

Add squash, let simmer for 15-20 minutes until tender and blend with a hand-held blender.

Add olive oil and enjoy!
